Quinoa & Apple “Cereal”
When you think of ways to eat quinoa, your first thought may not be “breakfast food”. But wait! Here is a very simple recipe that you can pre-make the night before and then quickly reheat it for a warm, delicious, nutrient-packed breakfast (although with a 15-minute cook time it can very easily be made á la minute!). This is a great example of the versatility of our favorite Superfood!
1/2 Cup Andean Pride White Royal Quinoa
1 Chopped Apple
1 Tbsp. Cinnamon
1 Tbsp. Coconut Sugar
Bring the quinoa, 1 1/4 cup of water, and the chopped apple to a boil in a saucepan. Cover; reduce heat to a simmer, and let cook for 15 minutes. When finished, fluff with a fork while adding the cinnamon and coconut sugar. Serve in individual bowls and finish each with cashew milk and shaved coconut.
